Chapter 14 — Food & Cooking
How long does an open bottle of wine last?
Red: 3–5 days re-corked in fridge. White & rosé: 5–7 days. Sparkling: 1–3 days with a stopper. Fortified (port, sherry): 1–3 weeks. Wine spoils from oxygen and heat, not aging.
Follow-up questions
Are wine preservers worth it?
Coravin for special bottles yes. Vacuum pumps and inert-gas sprays extend by a couple of days — not miracles.
Can I cook with old wine?
If it tastes like vinegar, no — that flavor concentrates. Slightly oxidized wine is fine for cooking.
