Chapter 14 — Food & Cooking
Do I need to go gluten-free?
Only if you have celiac disease (1% of people) or a diagnosed sensitivity. For everyone else, gluten-free is often more processed, more expensive, and lower in fiber. Cutting bread might make you feel better because you cut ultra-processed food, not gluten.
Follow-up questions
Celiac vs sensitivity?
Celiac is autoimmune, needs biopsy to confirm, requires strict lifelong avoidance. Non-celiac sensitivity is subjective, real for some, and often improves with sourdough (lower FODMAPs).
Is bread bad?
Ultra-processed bread, often. Good sourdough with 3 ingredients is fine for most.
